Connection time
I am looking at flights from SFO to Copenhagen, and the best flights in terms of airlines and travel times give me 1hr15min connection in Munich. Is that enough time? If I am through-booked, is the airline responsible if I miss my connection? I have the same problem coming back, but in Montreal, with just as little time for the connection. I still have memories of racing behind a wheelchair through the Frankfurt airport to make a connection, but this time we will not have an airport attendant pushing a wheelchair to expedite the travel time between gates.

There's no way we have the crystal ball for this. Depends depends depends. If you're through-booked on one and the same airline (or partner) on one ticket, at least you have the relative comfort of knowing that the airline will have to put you on the next available flight if you arrive in MUC too late to make the connection. But that "next" may be relative, so - if you think it helps any - ask your airline.

Munich is a reasonably small, very user-friendly airport, and connections are easy. It's not like Frankfurt at all, and if your flight is on time that should be enough time. If you're flying Lufthansa, there is even free coffee and newspapers (and Wi-Fi for an hour).
It's not clear to me whether the wheelchair you used was for a temporary issue or if it's a long-term mobility problem. If you need a wheelchair, however, I'd still try to book that in advance. It will make the transfer smoother.
The real problem at Munich is that many planes still park on and are boarded on the tarmac, so you have to take a bus shuttle out to the plane, and that adds time, though it's built into the schedule. It's also a pain when the weather is bad. But if you have issues walking up stairs, it could be a real problem for you.

Assuming you fly with Star Alliance airlines only which means your flights will be handled in Terminal 2:
Since the midfield satellite terminal opened, very few planes disembark on the tarmac. The downside is that you may arrive at the midfield T2 and depart for Copenhagen from the main T2. Or vice versa. Which means you need to take the people mover, which adds another 10 minutes to the transfer.
Nevertheless, if you incoming flight is on time, 1h15min is okay. If not (and since you will probably arrive in the AM hours from SFO), there will be more flights to CPH during the day in case you miss the one you want to catch.
