Child round-trip, different adult on each direction

Hello forum, I am planning a trip to bring my nephew from Spain to visit his American family in California, and here's a bit of a reservation puzzle I'm having:

Myself (I live in Spain):
- Madrid - SFO: 01AUG
- SFO - Madrid: 09AUG

My brother in law (he lives in SFO)
- SFO - Madrid: 31AUG
- Madrid - SFO: 15SEP

My nephew/his kid (3 years old, lives in Spain):
- Madrid - SFO: 01AUG (with adult: me)
- SFO - Madrid: 31AUG (with adult: his dad)

My question is how to book this. What options do I have to make round-trip reservations for all three of us, and having my nephew always show up as accompaigned minor?

Do you recommend any specific airline for this scenario? I was thinking AA but I'm open to suggestions.
