Follow "Flight Connections" signs. You will go through immigration and security in AMS, customs in FCO.
You do have plenty of time (AMS is one of the best airports to connect in), but you will probably have a looong walk to the Alitalia gates, so just be prepared and keep an eye on the time.

Just one more thought John,
in case your incoming flight is late and you know you'll miss your flight to Rome, then stop at the Alitalia transfer desk once you are done with immigration at the "Flight Connections" center. If they have a later flight, they will put you on it, if not, they can and will find another airline to get you to Rome.
Do not go to immigration/customs. No matter what, follow the "Flight Connections" signs.
For example, I was flying British Airways from Canada and connecting with another BA flight to Poland. Our incoming flight was really late due to a mechanical in Toronto and the flight to Warsaw already left with no other flights on BA to that particular destination on that day. BA transfer desk agent looked up available flights and found LOT flight available about an hour or so later. Not only did he rebooked me on that flight but personally walked me over to the BMI desk (LOT's partner) to actually have them issue the boarding passes before he thanked me for my business and wished me a great trip. British Airways IS NOT LOT's or BMI's partner.
