My wife and I are going to Hawaii in May. How far in advance should I book to get the best price and seat.

No one can give you a specific answer as airfares change constantly.
Monitor airfares on sites like Kayak and and sign up for airfare alerts on your airline(s) of choice's website so you get an idea of what the price ranges are. When you see what looks like a good fare book it - it may not be there very long.
There's no one answer to this. Research what the typical prices are, keep an eye on them, and when you see one you are comfortable with, snag it, and don't look back.
I also consider the flight times, routing, nonstop whenever possible, etc. not only the ticket price.
