THis is impossible to answer unless you give more information.
Do you want upscale accommodations or a tent?
Are you planning on eating three meals a day in restaurants? What level of restaurant do you prefer?
It would be helpful to know where you are considering, but I will offer the following from last October/November:
Middle of the road (3 star) in Egypt & Jordan about $100 -110 per person per day including guide, entry fees and at least half of the meals. We took boat from Aswan to Luxor, which may have skewed the numbers a bit. Airfare would cost extra, i.e. Cairo to Aswan & Luxor to Cairo.
Did not do Israel, but quotes were about double for same type of tour.
