Go to the UAE official website for info whether Visa required.
For Egypt, yes Visa is required and can be purchased on arrival, cost USD$15.
As to inoculations specific for these two destinations or just inoculations for travel anywhere you can check the US Centers for Disease Control site at www.cdc.gov/travel - select UAE and Egypt for information which you can review with your personal physician.
The CDC is a US site, though I'm sure Canada has similar for their citizens.
