Recommendations on Itinerary Needed

My husband and I are planning to fly into Istanbul, Turkey then fly to Isreal, and on to Egypt. From Egypt we wanted to travel by boat to a few of the Greek islands, and continue on from there until we reach Athens where we would fly back home. We were hoping to spend one week in each area. My questions are what other places in Turkey are a "must see" and is there a place along the coast of Egypt that would be a good place to visit and get a boat to go to Greece. Any advice or recommendations would be greatly appreciated, as I am just in the initial phase of planning this trip.
