Hi there, I'm no expert but we spent 4 days in Dubai this past May.
The highlights for our 'flying' visit were, staying Jumeriah Beach Hotel (in our humble opion one of the best we've ever stayed at), free shuttle to Mall of the Emirates (a must see at least once) and the free shuttle (drops and collects in a loop, so Mall first and then the G/D market on the way back or visa versa) to the Gold and Diamond Market, (much preferred it to the Souks which is downtown).
And the Desert Safari dinner experience, such fun. (unfortunately you wont be able to do this).
So maybe check in, and although it will be late, no doubt you'll be 'wired' so have sometime relaxing (the lobby, bar and restaurant area is second to none, and checking out the hotel (not sure were you will be flying in from and how tired you'll be) and the amazing view over to the Burj, while sitting by the pool bar,(better than actually being 'at' the Burj),then spend the next day doing some 'shopping' or at least window shopping.
Just a thought, hope it helps. ;-)

Can't comment re Cathay and what they may/may not offer. Do check the Emirates site (or Dubai Tourism site) where you'll find info re hotels, transport and sightseeing.
There's lots of construction in Dubai so traffic is terrible (maybe not too bad at night, but during daytime will be). Arriving 10PM you might not get to other than a close-by-the-airport hotel before 11:30pm. Next day you have to be at airport 2.5-3/hrs prior departure for Intl flight. Doesn't leave much than maybe 4/hrs.
