off to advice?

We leave for a month-long journey through Tunisia in less than a week and have pretty much mapped out our trip. We'll be spending time in Tunis, Tataouine, Douz, Ksar Ghilane, Tozeur, Le Kef, and Tabarka. Can anyone offer any restaurant suggestions or cool, must-see places to visit? We don't drive, so we're limited to spots we can reach via bus, louage, train, etc.
The one thing still up in the air is Ksar Ghilane: We're unsure of exactly how to get to and from Ksar Ghilane. We were quoted 390TD round trip for 4WD from Tataouine to Ksar Ghilane and then on to Douz, which seems very expensive! Granted, this is through the Pansea, so it is undoubtedly at a very high markup. But none of our many emails we sent to various tour companies were answered and we don't feel comfortable leaving the transport to chance.
We've read there are many tour companies that go to Ksar Ghilane from Douz, but we don't know how difficult - or expensive - it will be to hire a 4WD based around our schedule. Obviously, we need to reserve the Pansea in advance, but we're afraid we won't be able to get there from Tataouine or Douz unless we're willing to spend lots and lots of cash. Is it at all likely that we'll meet other travelers in Douz or Tataouine who'd want to share a 4WD?
Any ideas or general advice would be appreciated! Thanks!
