Morocco - 11 nights - comments on itinerary

My husband and I are planning an 11 night trip to Morocco in late April / May next year. We will be arriving from Australia, via Paris (overnight), so may still have some jetlag at the start of the trip.
After much research, we have come up with the following itinerary.
Marrakech - 4 nights (arriving late on first day). Probably do a 1 day city tour and another day tour to Essaouira.
4 day / 3 night private trip with Desert Majesty from Marrakech to Fes with a night in each of Ouarzazate, Dades Gorge and Erg Chebbi (staying edge of desert and not under canvas).
Fes – 3 nights. (1 day city tour?)
Then train to Casablanca for a night before flying out to Lisbon.
We have identified some possible accommodation in Marrakech and Fes, but have not made any decisions yet. Any suggestions for nice, mid-range accommodation are welcomed.
We had thought of spending one less night in Fez in exchange for a night in Chefchaouen, but have decided against it as it is a lot of extra travelling.
I am interested in any comments or suggestions other may have on our itinerary, especially with regard to how long we have planned for Marrakech and Fez.

    Well done on constructing an itinerary that covers a lot of experiences but still allows for some quality exploration of the magical, medieval cities of Fez and Marrakech.

    Marrakech to Fez: Your journey between these two cities with Desert Majesty (please give Felicity my regards) is just right...most people attempt this in 2 nights.

    Marrakech: On your free day, perhaps consider a day trip up to Imlil and the Kasbah du Toubkal, as the view from the kasbah to the snow-topped peaks should be simply stunning in April/May. But make sure to allow some time to simply soak up the atmosphere around Jemaa el Fna, and visit some of the newer, more interesting museums such as Maison de la Photographie, Marrakech Museum of Photography & Visual Arts, Musée de l'Art de Vivre and Musée des Bijoux Nawahi. Anna and Guy's Riad Jonan is a well-priced guest house down in the kasbah quarter.

    Fez: I agree with your decision to stay in Fez rather than squeeze in a visit to Chefchaouen. The journey from Erg Chebbi is a long one, so two full days in Fez will also allow you some down time. Perhaps consider a cooking class on the second day. Aussie Josephine's Dar el Hana is a wonderful mid-range guest house in the medina.
