Israel itinerary

DH & I (mid-60s, good health, active) will arrive in Israel Oct 7, return home Nov 7. We went on a 12 day first timers trip with our (Reform Jewish) congregation in 1999.
Places we saw then that we don't care to repeat: Masada, Caesarea, Dead Sea dipping, Safed.
Plane tickets are bought, but I haven't arranged for any accommodations, so can tweak the itinerary as need be. Our strong preference is to stay in apartments; we like having a separate living room and bedroom, as well as a kitchen. We've had good results with VRBO & AirBnB in other places, but would consider other sites as well.
One goal was to avoid what we call "one night stands"; we prefer to stay in one place for multiple nights, doing day trips (of no more than 80 miles in one day) to sightsee.

Oct 7-14: Jerusalem Recommendations for neighborhoods close to the Old City as well as restaurants and public transportation?
Oct 15: Pick up rental car from Eldan, drive to Eilat, stopping at Qumran & Ein Gedi. Where in Eilat for an apartment?
Oct 16: Underwater observatory, snorkeling, sunset camel ride
Oct 17: Hai Bar, Timna NP
Oct 18: bird observatory, desert tour
Oct 19: Drive to Mitzpe Ramon. Visit crater, desert sculpture park, evening star gazing
Oct 20: Avdat, Ein Avdat NP, Ammonite Wall
Oct 21: Ben Gurion Home & Grave, Alpaca and/or goat cheese farm
Oct 22: Drive to Be'er Sheva: Mitzpe Revivim, AF Museum, Tel Beersheva NP
Oct 23: Art Museum, Abraham's Well, Museum of Bedouin Culture
Oct 24: Drive to Galilee, visiting Beit Guvrin & Mini Israel; if time permits, we may stop at Kibbutz Tzora, where our daughter lived her junior year in college 1993-4 Where, at the south end of Lake Kinneret, should be spend the next 3 nights?
Oct 25: Beit She'an, Bet Alpha, Mt Gilboa Scenic Rd, Belvoir
Oct 26: Mt Tabor, Kfar Kama, Kfar Tabor, Zippori NP
Oct 27: Circle Lake Kinneret, stops as time & interest allow, ending in Rosh Pina for 3 nights
Oct 28: Tel Hazor, Agmon, Hula Lake Bar'am NP
Oct 29: Ne-ot Mordechai, banias NP, Nimrod Fortress
Oct 30: Rosh HaNikra, Lochamel HaGetaot, to Haifa for 4 nights
Oct 31: Haifa
Nov 1: Beit She'arim, Megiddo, Daliyat el Karmel
Nov 2: Akko
Nov 3: Zikron Ya'akov, to Tel Aviv for 4 nights
Nov 4: Diaspora Museum, Palmach Museum, Rabin Center
Nov 5: Old Jaffa
Nov 6: Bauhaus walking tour, Carmel Market, Nahalat Binyamim

If there are days where I have planned to much or too little or where the activities just don't make sense, I'm open to hearing about it. If there's something I've missed or if some things aree significantly repetitive of each other, I'd like to know that.
