Garden Route PE to Cape Town

Any comments would be gratefully appreciated:
In three weeks we will be driving Port Elizabeth to Cape Town over one week.
Our plan is Storms River (two nights), Knysna (two nights), Montagu and Franschoek one night each.
We are planning to drive Knysna to Montagu via Oudtshoorn realizing that this will be our longest day. But I think there will be enough day light hours to do this.
Then it will be a more relaxed time with the next two stops.
We are seeking advice on the route from Montagu on. Would prefer paved roads but still a scenic drive. From reading Route 62 seems to be the best, most scenic but not sure where it is considered to start and end. Any pass that should not be missed?
Also any unique or charming restaurants en route that would be fun to enjoy. We enjoy those types of experiences.
Thanks for any suggestions. We are soooooo excited!
