I would recommend Petra if you didn't already have it on your agenda. You may even want to spend a few days there. Jerash is another site I'd recommend.
I assume you will go to the dead sea when your in Israel, but if you don't then go while your in Jordan the healing properties of the salt water and the mud baths are well known all over the world.
