If you have your heart set on the mideast, I would stopover in Dubai and stay at one of the Jumeriah hotels or the One and Only hotel(I stayed at Mina a'Salam) and then go on to Oman and stay at the Shangri-la Al Waha hotel in Muscat which is for adults only and very romantic with fantastic service and perched on their spectacular coastline. You could do some day trips from there and also diving/snorkeling. I loved Oman and wished I'd had more time there.

I can see spending 16 days in Italy or even Israel or Morocco, but not Dubai. And you might very well want to take a second look at Egypt.
But I think moremiles has the right idea. If you want to travel in the region, Oman has a lot more to offer than Dubai. Emirates does offer an Arabian Airpass from Dubai that allows you to fly fairly cheaply to about a dozen other Middle East destinations. You might be able to visit other places Americans don't visit often like Beirut and Muscat.
I would avoid Bahrain right now. There's been some unrest there over the weekend.

congratulations! While Egypt is wonderful, in May I think Sicily for the whole time would be even better -- great food, offshore islands, great history, wineries, landscapes or the Madore mountains incredible and wildflowers abound!

Congratulations! My vote: Sicily or anywhere in Italy. For a honeymoon you can't beat the romantic opportunities presented by beautiful Italy. Haven't been to Egypt yet but will be reporting after our March/April trip.

Have you ever thought of Dubai and Maldives together. It's a very popular trip combination. You will get to experience the best of both worlds, a little bit of city and some rest and relaxation on a beautiful tropical island.

I write just to regret your cancelling Egypt - and yes, your other correspondents are correct, 16 days in Dubai will have your jumping out of your hotel window.
Italy is great - we would never dissuade someone from going there. We have had great success with an outfit called "Rentals in Italy" located in California. They rent apartments and homes throughout the country. Much cheaper than hotels, and they have an extensive number of places to rent.
But we are specifically GOING to Egypt in May. What a great time to visit. A country in the midst of exciting transition, hungry to get the tourist trade back. Security will be poised to watch out for tourists. THE time to be there. Hope you'll give your cancellation a second thought.
And have a wonderful honeymoon and many happy years to follow.
