Dubai for New Years Eve - Fireworks, Itinerary

We have the opportunity to go to Dubai for New Years Eve this year. Does anyone have recommendations on the best way to watch the fireworks? Can you see the Burj Khalifa fireworks from the sea (where you can also see the Burj Al Arab and Palm fireworks)? I'm a bit worried that we're too late to book a hotel with a good view of the Burj Khalifa fireworks, but maybe that's not the best viewing option anyway.

Also, if we go, we'd have either 2 or 3 full days in Dubai (flying from HKG so I know we'll have some jet lag on day 1 but we'd push through it). While we're there, we'd like to do a trip to the desert and would also like to check out Abu Dhabi. If we only have 2 days in UAE, and essentially spend 1 day in Abu Dhabi and 1 in Dubai, is that enough time to see Dubai or should we really have 2 days in Dubai?

I'd also love any hotel recs (or areas that people recommend to stay since lots of places are sold out) - both what you'd recommend considering we're going for NYE and also what you'd recommend if it weren't NYE (so just what would be best for sightseeing, etc). Thanks!
